Incredible apple pie.

If you've been reading here long, you know that I don't typically link to things unless I think a lot of them and think you'll like them too.

Well, today I'm sharing this link to Pioneer Woman's Dreamy Apple Pie because it really is dreamy! I've been making apple pies for years and was happy with my product, but when I saw her photos, I had to try this one. Today was the day.

There's a piece missing because Man-boy was faster with the knife than I was with the camera. He declared, "Mom, this is the best apple pie I've ever had in my life!" and that's no small compliment coming from the boy-with-the-hollow-leg.

I did make a few minor changes to the recipe. I didn't have Granny Smith apples, so I was using Gala. And because they're sweet and not tart, I used half the amount of brown and white sugars (and half the cream) in the filling. Also, next time I will add more flour to the cream mixture. This is pretty juicy. Of course, that could be because of the apples, or because we (Did I say that? I mean HE. Ahem.) were eating it hot out of the oven.

Unless the husband vetoes this, I will be making this for Thanksgiving dinner.

Be thankful ~

Karen
